This burger is my Southern-style homage to game-watching nights in front of the TV—an epic griddled smash burger with a pimiento cheese sauce to top it off. That’s barbecue chicken, right there!

Jalapeño-Pimiento Cheese

1 cup shredded Monterey Jack cheese

½ cup canned pickled jalapeños, drained

¼ cup plain cream cheese, at room temperature

¼ cup mayonnaise

1 teaspoon hot sauce (preferably Tabasco or Crystal)

1 teaspoon Worcestershire sauce

½ teaspoon kosher salt

½ teaspoon freshly ground black pepper
